Orange Ginger Cranberry Sauce

This is a great variation on a Thanksgiving staple. This recipe makes a lot. If you want some for just your own family, a half or a quarter recipe is plenty. This recipe freezes well.

Ingredients
2 lb fresh cranberries
1/2 C sugar
2 C orange juice
1/4 C minced ginger
1 C orange segments
4 T orange zest
Preparation: 
  1. Combine cranberries, sugar and orange juice in medium sized pot.
  2. Heat on med-high, stirring occasionally, until berries start to burst and the sauce starts to thicken.
  3. Add ginger and simmer for a few minutes.
  4. Remove from heat.
  5. Stir in orange segments and zest.

The sauce will continue to thicken as it cools.

Serving Suggestions: 

This recipe goes well with a poultry dish.
