Orange Ginger Cranberry Sauce

This is a great variation on a Thanksgiving staple. This recipe makes a lot. If you want some for just your own family, a half or a quarter recipe is plenty. This recipe freezes well.

Ingredients
2 lb fresh cranberries
1/2 C sugar
2 C orange juice
1/4 C minced ginger
1 C orange segments
4 T orange zest
Preparation: 
  1. Combine cranberries, sugar and orange juice in medium sized pot.
  2. Heat on med-high, stirring occasionally, until berries start to burst and sauce starts to thicken.
  3. Add ginger and simmer for few minutes.
  4. Remove from heat.
  5. Stir in orange segments and zest.

The sauce will continue to thicken as it cools.

Serving Suggestions: 

This recipe goes well with a poultry dish.
